In Hanoi I chased the first smoky scent of bun cha along narrow alleys, where grilled pork sang sweetly from a sizzling strip and rice vermicelli lay like pale rivers beneath a lacquered bowl. A travel-lit moment, tasting the balance of fish sauce, herbs, and char, as the city hummed around me and a friend swapped stories over the broth-light breeze. The memory lingers as a gentle, savory postcard from a street-side tableânot a restaurant original, just the honest flavor found between wandering, tasting, and a shared smile.
âMake marinade: mix 2 tbsp fish sauce, 1 tbsp sugar, 1 minced garlic clove, 1/2 tsp salt and 1/2 tsp pepper; divide and marinate sliced pork and minced pork 30â60 min.
Form 6â8 small patties from the minced pork and brush both patties and sliced pork with oil and extra fish sauce before grilling.
Grill or pan-fry pork slices and patties over medium-high heat until charred and cooked through, about 6â8 min each side for slices, 4â6 min for patties.
Make dipping broth (nưá»c cháș„m): dissolve 50 g sugar in 200 ml warm water, stir in 40 ml fish sauce, 30 ml lime juice, 1 minced garlic clove and sliced chili; add thin carrot and papaya/apple pieces.
Cook rice vermicelli in boiling water 2â3 min until soft, drain and rinse with cold water; portion into serving plates.
Assemble: put vermicelli on plate, add lettuce and herbs, place grilled pork on a small plate, serve a bowl of broth with a few pork pieces and pickled veg; dip or pour broth over noodles to eat.
