On a sunlit Hanoi morning, I chased the silky illusion of cĂ phĂȘ trứng with a spoon that barely woke the foam, the first sip carrying notes of sweet condensed milk and coffee that tasted like a folded memory from a street-side cafe. I found the same gentle warmth in a quiet bĂĄnh cuá»n stall and let the foam drift through the air as if it were a tiny cloud of comfort. The ritual of whisking the egg into the hot brew became a small traveler's ceremony, a moment where hunger met curiosity and settled into a soft, velvety sigh.
âBrew 120 ml very strong hot coffee (espresso or strong drip) and pour into a warmed cup.
Separate 1 egg yolk into a bowl and add 20 g condensed milk, 5 g sugar and 5 g butter.
Whisk the yolk mixture vigorously by hand or with an electric whisk until pale, thick and frothy (about 2â3 minutes).
Spoon the whipped egg cream over the hot coffee to form a layered top.
Dust cocoa powder across the foam (use a stencil for a pattern) and optionally a light sprinkle of cinnamon.
Serve immediately with a small spoon; stir to combine as you drink.
