    Cook vermicelli according to package, rinse under cold water, drain. Prepare all fillings.

    Dip one rice paper wrapper in warm water for 15 seconds until just pliable — not fully soft.

    Lay flat on a damp surface. In the bottom third, layer a piece of lettuce, noodles, cucumber strips, herbs, and shrimp.

    Fold sides in, then roll tightly from the bottom up. Repeat with remaining wrappers.

  5. 5

    Serve immediately with peanut dipping sauce.
