Preheat oven to 190°C (374°F). Grease a 12-hole muffin tin. Cut pastry into circles and press into each hole. Blind bake 10 minutes.
Cook bacon in a dry pan until crispy. Divide bacon and grated gruyère among pastry cases.
Whisk eggs, cream, salt, pepper, and nutmeg together. Pour into each pastry case.
Bake 15–18 minutes until filling is just set and golden. Cool slightly, garnish with chives, and serve.
