Steamed Crab Sticky Rice (蟹蒸饭) presents its comforting fragrance as the crab’s sweetness seeps into soft grains. The dish highlights one distinctive ingredient: fresh crab meat folded through the glutinous rice until each bite holds a subtle ocean kiss and a chewy bite. The dish reminds me of quiet river towns where seafood is a shared ritual, and steamed rice carries the memory home in each inviting crumb.
”Rinse glutinous rice until water runs clear; soak 2 hours and drain.
Lightly crack or cut crab into pieces, reserve shell and roe; season pieces with 1 tbsp shaoxing and a pinch of salt.
Heat lard or oil in a pan, sauté minced ginger and white parts of scallions 30 sec, add drained rice and toss 1–2 min.
Stir in soy sauce, oyster sauce, remaining shaoxing, sugar, white pepper and stock; taste and adjust seasoning.
Transfer rice to a shallow heatproof dish or bamboo steamer, tuck crab pieces and roe into rice and place shell on top.
Steam over rolling water 30–40 minutes until rice is tender; scatter corn if using in last 10 min.
Garnish with chopped scallion greens and serve hot from steamer.
