In the glow of Chang Phuak Market, I chased a bold coconut aroma until a street stall offered a creamy coconut ice cream crowned with mung bean pearls and a flurry of shaved ice. The first taste tasted like travel itself—cool, sweet, and a little tropical wind that reminded me of wandering from fancy eateries to buzzing night stalls. I called it a home-style recreation, shared with a friend who laughed as the snow-like surface melted into palm sugar glaze.
”Make coconut ice cream base: whisk coconut milk, condensed milk, sugar, vanilla and pinch of salt until sugar dissolves.
Chill mixture 1 hour, then churn in an ice-cream maker or freeze stirring every 30 minutes until scoopable (about 3–4 hours).
Cook mung beans: simmer split mung beans in 500 ml water until tender but holding shape, drain and cool.
Assemble: pack shaved/crushed ice into a cup, spoon cooled mung beans around edges.
Top with 1–2 scoops coconut ice cream and drizzle warm or room-temperature coconut cream and optional palm sugar syrup.
Finish with a few roasted peanuts if using and serve immediately.
