Cháo shows the quiet, comforting side of Hanoi’s food culture. The soft rice porridge is built through contrast: crisp lengths of quẩy, savory pork floss, fresh herbs, and pepper each add a distinct layer without overwhelming the bowl.
”Rinse rice until water runs clear; combine rice, 8 cups water and 2 cups chicken stock in a pot.
Bring to a boil, reduce to simmer and stir occasionally until rice breaks down (30–40 min).
Add chicken thighs to simmering porridge and cook 10–12 min until cooked through; remove and shred.
Return shredded chicken to pot, season with salt, fish sauce and white pepper; adjust thickness with water.
Heat oil, briefly sauté sliced scallion then drizzle over porridge; stir to distribute.
Ladle cháo into bowls, top with sliced quẩy, scatter pork floss and finish with black pepper and optional lime.
